Light and Tasty Summer Treats

Summertime is finally here! It’s the season for fun in the sun, and here are some healthy and quick recipes to keep you upbeat and energized. Don’t like to cook? No problem. These are simple options that require little technique and very few tools.


Cucumber Cheese Slices
Slice up the cucumber into circles of equal thickness; crumble feta or goat cheese over each slice, and then sprinkle paprika, pepper and dill weed over it. This easy snack looks so colorful on a plate. Just think of the cucumbers as substitutes for crackers and adjust the recipe to add your favorite toppings!

Lemintade comes from my travels in Israel. It’s a classic that you’ll find in Israeli restaurants and homes, only it’s called Limonana. This is an easy way to spruce up your classic lemonade drink by simply adding mint leaves—refreshingly tasty and cooling for hot summer afternoons.

Sun-dried Tomato Dip
Chop up sun-dried tomatoes and add them to 1 cup of yogurt. Mix in ½ a teaspoon of dried rosemary, ½ a teaspoon of lemon juice, and salt and pepper (to taste). Stir everything together and garnish it with a little parsley, and voila! You have a delicious dip.

Grilled Fish Taco
Summer barbeques can be a little different this year with tacos instead of burgers. I used fish simply because it was available; you can substitute fish with any meat of your choice.

When you’re grilling, you can’t go wrong with just salt and pepper–the fire adds enough flavor to make it delish! Once your meat is cooked, cut it up into small pieces and put it in a tortilla with your choice of toppings, such as avocado, lime, salsa, beans, and so on.

Tip: If you cook fish, cover it in lemon juice for half an hour prior to cooking
